Summer Veggie & Quinoa Tabouli with Tzatziki Sauce

1 cup cooked quinoa
¼ cup diced yellow squash
¼ cup diced zucchini
¼ cup diced tomato
¼ cup diced red onion
1 diced avocado
Wash and dice vegetables small. Combine all ingredients in a bowl and toss with prepared Tzatziki Sauce (recipe below).
Tzatziki Sauce
1 cup plain Greek yogurt
½ large or 1 small cucumber, seeded and diced very small
1 garlic clove, minced
1 tablespoon lemon juice or white wine vinegar
¼ teaspoon sea salt

Mix all ingredients in a small bowl. Leave in refrigerator overnight for more flavor (before combining with quinoa and vegetable mixture).
